Bang Ramat roasted coconut shop keeps tradition alive

For more than a decade, Somboon Jaising has preserved a traditional Bang Ramat craft by roasting coconuts over smokeless charcoal. 

Her shop, near Bangkok’s Khlong Lat Mayom Floating Market, has adapted to modern air-quality regulations while keeping alive both the flavour and local knowledge of a tradition that could soon disappear as orchards give way to urban development.
