New taste tinglers for your palate

Bangkok is a city that never sleeps, at least in the food and beverage department. Blink and you’ll miss another new restaurant opening, a drink launch, or a new nightclub. Guru By Bangkok Post is making sure that even if you blink, you don’t miss out on the new taste tinglers that are worth mentioning in Bangkok and beyond.

Kwantip – Samrub Thai Dining

Kwantip – Samrub Thai Dining by chef ML Kwantip "Pom" Devakula invites diners to reconnect with the foundations of Thai cuisine through the enduring tradition of samrub, a complete Thai meal in which contrasting dishes are served together as one harmonious composition.

Kwantip is rooted in the preservation of Thai culinary knowledge passed down through generations. Drawing on recipes and techniques inherited from her family, including Central Thai palace cuisine from Devavesm Palace passed down by her grandmother and southern Thai recipes from Thung Song passed down by her mother, chef Pom presents Thai cuisine as a living heritage rather than a fixed historical artefact.

At the heart of Kwantip’s philosophy are three dimensions of culinary heritage: traditional cooking methods, inherited recipes, and the traditional way of eating. Together, these elements reveal the foundations of Thai cuisine with its attention to balance, understanding of contrasting flavours, and the ability to bring a variety of textures, techniques and tastes together at the same table.

“Every Thai dish has its own charm and defining flavour that gives it a unique identity,” says chef Pom. “Each family may prepare a dish differently, but its defining flavour must remain. At Kwantip, we aim to preserve the knowledge and flavours of the dishes my grandmother and mother used to prepare for me. I now prepare these same recipes and flavours for my children and everyone to enjoy, passing down the original tastes from one generation to the next.”

Unlike a Western-style progression of courses, samrubis traditionally served all at once. Diners move between dishes, combining and contrasting flavours according to the natural rhythm of the meal. Spicy, sour, salty and sweet elements are enjoyed alongside one another, while different cooking techniques — steaming, frying, currying and the preparation of relishes — create a complete and balanced dining experience.

Chef Pom’s approach embraces ingredients from around the world, including Japanese Wagyu, ama ebi, caviar and uni. She believes that any ingredient can be used in traditional Thai cooking, provided there is a deep understanding of both the ingredient and the foundations of Thai cuisine. This approach allows her to elevate each ingredient and dish while preserving its original character and identity. Chef Air Kulapol Samsen, chef Pom’s youngest son, represents the next generation of the family’s culinary lineage. Together, mother and son create a dialogue between generations, with chef Pom leading the preservation and storytelling of the family’s culinary heritage.

Restaurant Rosa

Restaurant Rosa introduces a fresh culinary chapter to Yaowarat through "Crossroads Cuisine", where cultures, memories, flavours and emotions collide.

Restaurant Rosa contrasts sharply with its “old town” surroundings. Almost entirely shrouded in white, the restaurant features clean lines, crisp white tablecloths and minimal, industrial-inspired décor. At its centre, botanical arrangements are refreshed daily, often featuring rare plants.

Diners are encouraged to experience Rosa without too many preconceived notions. Instead of a conventional menu, the experience unfolds progressively, with each course introduced through a single word or clue designed to tantalise the mind as much as the palate.

"No Chef" means Rosa is not built around one personality, one ego or one individual point of view. Its culinary identity is collective, focusing on what is created rather than who stands behind it. "No Menu" reflects the same philosophy. Guests are not asked to define the experience before they have lived it. Rosa’s Crossroads Cuisine avoids placing food into rigid categories, drawing from Thai, Chinese, Indian and Western influences.

Aela Social Bar

Aela Social Bar debuts as Bangkok’s newest modern luxury social bar at the Fairmont Bangkok Sukhumvit.

Alexander Falcetelli Makarov, beverage and bars manager, brings his international mastery of mixology to Bangkok. Russian-born, raised in Italy and with a career built across Europe and the Middle East, he combines the precision of his engineering background with an instinctive understanding of hospitality. “For me, the measure of a successful night isn’t technical execution—it’s long conversations, laughter, and that quiet moment when guests lose track of time. The best cocktails aren’t just tasted; they’re remembered,” he says.

Inspired by the movement of light across crystal, the elegance of architectural geometry, and the effortless sophistication of modern hospitality, the space comes to life under "The Art Of Reflection".

Through the philosophy of "Liquid Thinking", cocktails are crafted not only for flavour, but also to evoke specific emotions and mental state. Inspired by the vibrant rhythm and the ever-vibrant nightscape of Sukhumvit, the bar presents “A Journey Through States” — guiding guests through Four States of Perception, featuring four signature cocktails for each sensory chapter: Arrival, Orientation, Ground and Release.

Pru

Pru at Trisara Phuket reopened its doors on Oct 1 following a comprehensive renovation. Bidding farewell to its "Pru 2.0" chapter, the restaurant embarks on its next phase with executive chef Jimmy Ophorst continuing to champion the community-to-fork ethos (Pru - Plant, Raise, Understand).

The reopening leads directly into Pru’s 10th anniversary, celebrated from Oct 27 to Nov 1 with "The Gathering", a milestone week featuring six collaborative dinner chapters with guest chefs across Asia, culminating in an open-fire Farm Festival.

The "Farm Festival – A Celebration Beyond The Table" will transform the Pru-Jampa Farm into a Sunday gathering of food, drinks, producers, workshops and entertainment, opening the final chapter of the anniversary to a much wider community. Rather than another formal restaurant dinner, the day will bring Pru’s philosophy out of the dining room and into the landscape that has played a fundamental role in shaping it.

Guests will be able to move between 12 food booths by Pru and its guest chefs, alongside beverage experiences and showcases from farmers, makers and long-standing partners who have contributed to the restaurant’s journey. The festival will also feature hands-on art and craft workshops, a dedicated family and kids zone and entertainment.

Among the partners joining the day will be Sai Yok, Cutboy, Trang Pepper, Go Organic Farm, Kad Kokoa, GranMonte, Full Moon Brewery and SriSom Art Studio, alongside other producers and collaborators. The Farm Festival comes at the end of six days of collabs with chefs like Deepanker “DK”Khosla of Haoma, Syrco Bakker of Syrco Base, Aaron Isip of Kása Palma, Gongpitak Boontanaveerapat of Jampa, Suwijak Kunghae of Royd, Nattaphon Othanawathakij of Heh, Chalee Kader of Wana Yook, Worawit “Notty” Rattanachoochok of La Crique, Rudttborn Pumsirinun of Thai Library, Riley Sanders, Natdanai Kitkorsub and Phanuphon Bulsuwan for a series of dinners.

Ciao Terrazza

Reopening on Oct 23, Mandarin Oriental, Bangkok’s seasonal Italian restaurant welcomes guests with house-made pasta, signature favourites and new dishes by chef Emanuele Bergamo.

Ciao Terrazza will present returning favourites and new additions, including dishes inspired by chef Bergamo's native Venice. The menu moves from Venetian-inspired small bites to freshly made pasta and charcoal-grilled meats, reflecting the regional variety of Italian cuisine.

Among the highlights is Battuta di Manzo. Inspired by Venice’s cicchetti culture of small bites enjoyed with an aperitivo, the dish presents classic Italian beef tartare in a snack-style serving, with Australian beef, egg yolk and pickles on toasted rye bread.

A restaurant signature, Fettuccine all’Astice pairs house-made fettuccine with Boston lobster, lobster coral sauce and tomato ragout. Prepared daily with semolina flour and eggs, the pasta is rolled slightly thicker for a firmer texture that holds the rich sauce better.

For Costolette d’Agnello, a lamb rack is cooked over charcoal, giving the meat a delicate smoky flavour. It is served with marinated celtuce dressed with garlic-infused oil, chilli and white wine vinegar, alongside a rosemary and Valpolicella red wine jus.

Sàat x GranMonte

Sàat and GranMonte Vineyard and Winery come together for "Terroir To Tart", a collaboration that transforms the flavours and ingredients of Thailand’s wine country into desserts through the distinctive modern Japanese touch of chef Saki Hoshino.

Available until Jan 31, 2027, "Terroir To Tart" explores GranMonte beyond the wine glass. Chef Hoshino works with different expressions of the vineyard, from wine and grape juice to grape leaves. The special menu features three creations: Daily raw fish, Spring Chenin Blanc jelly; Grape juice coconut cheesecake; and GranMonte grape leaf sorbet.

Árō

Árō, the debut restaurant by chef Johanne Siy, opened in Singapore last month.

Born in Pangasinan and shaped by kitchens including Le Bernardin, Café Boulud, Restaurant André, Noma, Relæ and Fäviken, chef Siy has spent years exploring the relationship between ingredients, producers, craft and culture — and Árō is the crystallisation of that lifetime of experience.

The name draws from two words: in Latin, arō means to plough, till, or cultivate; in Johanne's hometown dialect, áro means love. Together, they form what she calls a "labour of love" — not anchored to any single nationality, cuisine, or geography, but expressing the full arc of her lived experience through what she terms "Creator's Cuisine".

At Árō, the ingredient is the seed-idea and orchestrator. Through a 12-serving tasting menu, chef Siy draws attention not only to what is on the plate, but also to the people, places and craftsmanship behind it. She describes herself less as a chef in the traditional sense and more as “an agent who tells the stories of the communities behind the produce we use.”

That philosophy extends to ingredients the chef believes deserve a greater place on the world stage. While rooted in distinct places and traditions, the dishes are not anchored to a particular nationality, cuisine or geography. Instead, they draw from the people, places, ideas and encounters that have shaped her journey.
